Green Apple Salad

Recipe

Ingredients:

Dressing

5 tablespoons fresh lime juice

2 teaspoons fish sauce

3 tablespoons honey or palm sugar

1/4 teaspoon salt

3 green apples, thinly sliced

3 scallions, chopped

3 shallots, finely sliced

¼ cup fresh mint leaves, finely chopped

2 hard boiled eggs, shelled and sliced about ¼ inches thick

Garnish

1 tablespoon fried garlic

  1. In a bowl, combine lime juice, fish sauce, palm sugar or honey if using and salt and mix well to incorporate the flavors. Set aside.
  2. To prepare the salad combine apple, scallions, shallots and mint leaves in a bowl. Add the dressing and toss the ingredients to mix well.
  3. Place the salad ingredients on a plate, top with sliced egg. Garnish with fried garlic and serve immediately.

To Make Fried Garlic

Heat 2 tablespoons of oil in a wok, add 1 tablespoons of minced garlic and fry until golden. Remove and use as garnish for salad.
